Greek Frittata

Preheat oven to 350 degrees
1 T Olive or Canola Oil
1 c Cooked Fresh or Canned Spinach, drained
4 Eggs
 1/2 c Crumbled Fetta Cheese
2 t Italian Spice Mix
 1/2 c Chopped Onion
1/2  can Whole Black Olives
Salt and Pepper
Combine eggs, cheese, oregano, salt and pepper, set aside.
Heat 1T oil in ovenproof skillet over medium heat, add onion
and saute, add spinach and pour egg mixture over the top,
Cook until egg begins to set, about 3 minutes. Do not stir. Top with 1/2 can whole olives.
Place skilletin oven for 10-12 mintue.
